Green Thai Olive Pesto Fettucine

Ingredients

  • 500g Fresh Fettucine pasta
  • 1 Packet of pitted green olives, halved
  • 1 Cup of Buffet Olives Green Thai olive pesto
  • 1 – 2 Green chillies, chopped
  • 50g Cashew nuts, chopped & toasted
  • Lime zest
  • Bunch of coriander, extra for topping

Method

  1. Add some olive oil to a small frying pan & toast the cashew nuts until golden brown. Set aside.
  2. Prepare pasta according to the directions on the package. Cook until al dente and drain, reserving 1 cup of the pasta liquid.
  3. Place the pasta back into your pot with a couple of tablespoons reserved cooking liquid and a generous glug of olive oil. Mix the halved green olives, the green Thai pesto, lime zest and coriander into the pasta and give it a good toss.
  4. Plate to your preference and top with extra lime zest, fresh coriander and chopped cashews.
