Traditional Greek Salad with Calamata Style Olives

Ingredients

  • Half an English cucumber (cut into bite-sized chunks)
  • 4 large ripe tomatoes (cut into bite-sized wedges)
  • 1 green bell pepper (seeded, white pith removed and sliced)
  • 1 small red onion (thinly sliced, amount according to taste)
  • A handful of Buffet Olives Calamata Style Olives
  • A large piece of feta cheese (broken up into large chunks and not crumbled)
  • Best quality extra virgin olive oil
  • Best quality dried oregano
  • A grind or two of black pepper
  • A squeeze of fresh lemon juice (never use bottled, as it will ruin your salad) or a dash of good quality red wine vinegar
  • Your favourite crusty bread (warmed in the oven before serving)

Method

  1. Place the sliced onions in a bowl of ice-cold water and allow them to rest for 5 minutes. This will make the onions milder in flavour.
  2. In a salad serving bowl, add the cucumber, tomatoes, green pepper, sliced onion, and olives.
  3. Gently toss the ingredients together, ensuring they are evenly distributed.
  4. Evenly distribute the chunks of feta cheese on top of the vegetables.
  5. Lightly sprinkle a pinch or two of dried oregano on top, and season with black pepper to taste.
  6. Drizzle with a swirl or two of the best quality extra virgin olive oil, followed by a squeeze or two of fresh lemon juice (or a dash of red wine vinegar, depending on your preference).
  7. Serve immediately with slices of warm, crusty bread and a little extra olive oil for dipping.
  8. Enjoy with a glass of good quality chilled dry white wine.
