Homemade Chicken Burger & Salad

Ingredients

500g ground chicken (if you cannot get chicken mince, then buy some skinless/boneless chicken breasts and chop the meat finely with a sharp kitchen knife).
A little cooking oil and a tablespoon spoon of butter
1 free-range egg
A quarter cup of fine bread crumbs
2 fresh garlic cloves, very finely minced (do not use store-bought, pre-chopped garlic)
2 tablespoons finely chopped fresh chives
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh coriander
2 level teaspoon chicken spice
2 ripe (but firm) thickly sliced avocadoes
A couple of fresh radishes finely sliced
A handful of Buffet Pitted Calamata Style Olives
Half a bag of mixed salad leaves (leaves according to your taste but the herbier, the better)
A couple of lemon wedges
Good quality extra virgin olive oil
A couple grinds sea salt and black pepper

Method

  1. Mix chicken, bread crumbs, egg, garlic, chopped herbs and chicken spice in a glass bowl. Mix well with your hands. Divide the mixture into 4 even balls and then shape each into flattish, oval-shaped patties (shape lightly…do not over compress each pattie).
  2. Heat a little cooking oil and the spoon of butter together in a frying pan and lightly fry the chicken patties, on medium heat, until golden brown (& crispy) on the outside and cooked through (about 7min a side).
  3. Remove from the pan and rest for a couple of minutes on some paper towel to remove the excess oil.
  4. While the chicken is resting, place the salad leaves on one side of a large, flat serving dish, sprinkle the radishes, avo slices and olives on top of the leaves and drizzle a little olive oil all over. Top with a ground or two of pepper and sea salt. Place the lemon wedges on top of this. Now place the chicken patties on the other side and serve so that everyone can help themselves.
  5. If you would like to make these into “proper” burgers, then just serve some lightly toasted burger buns on the side, a selection of favourite condiments and any burger extras that you want.
