INGREDIENTS
- 2 tbsp Olive oil - 1 Onion, dice - 1tsp Caster sugar - 1 Packet Back Bacon, cut in chunks - 80g bag Baby Spinach - 5 Mushrooms, slice - Small tomatoes (keep whole if they are small, or halve for the bigger ones) - 1 or 2 wheels Feta cheese, crumble - ½ pack pitted Buffet Olives - 6 large eggs, beaten
METHOD
Set the oven to 180°C. Heat the oil in a frying pan and add the onion and sugar - cook over medium heat until the onion has softened. Add Bacon and cook for 2 minutes. Add the Mushrooms and Tomatoes and cook for a further 2 minutes. Turn off the heat, add the Spinach to the pan and stir until it starts to wilt. Spoon the Bacon and Vegetables into the oven dish. Add the Olives and stir to mix up slightly. Crumble the Feta on top. Season the beaten eggs with salt and pepper and pour over. Bake in the oven for 20-25 mins, or until just set in the centre. Remove from the oven and leave to cool.
