Buffet Olive and Potato Ratatouille

INGREDIENTS

- 2 Large Potatoes Peeled and Slice - 1 Can Tomatoes, or small fresh Tomatoes - 1 Punnet Mushrooms, sliced - 1 Medium sized Onion, chopped - 2 Large Baby Marrows, sliced - Red and Yellow sweet peppers, chopped (half of each) - Buffet Olives Green Pitted (half a packet) - Salt & Pepper to taste - 2 Tablespoons Dhanya Chutney (or any strong flavoured Chutney or Sweet Chilli Sauce) - 1 Teaspoon minced Garlic

METHOD

Pre-cook Potatoes until tender and set aside. Sauté Onions in a little Olive Oil and add Garlic, Salt & Pepper. Add sliced Mushrooms and chopped Sweet peppers. Stir and cook for 2 min. Add sliced Baby Marrows and cook for further 2 minutes while stirring frequently. Add small fresh Tomatoes or a can. Use the back of a spoon to break up the tomatoes. Add the Dhanya Chutney and Buffet Olives. Lastly add the pre-cooked Potatoes and mix in with the rest of the ingredients. This dish is delicious on its own, or served with meat. Enjoy hot or cold
