Buffet Olives, and Pasta Cheese Melt

INGREDIENTS

- 350g Pasta of choice (increase for more people) - 2 Tablespoons Olive Oil - 1 Onion Chopped - 1 Green Pepper, Chopped - 1 Red and 1 Yellow Bell Pepper, Chopped - 1 Can diced Tomatoes (or add fresh cocktail tomatoes) - ½ Cup Red wine, or Grape Vinegar - 1 Packet Buffet Olives (any of the range, or a mix of all), Halved - 1 Cup Feta Cheese, Crumbled - 1 Cup Cheddar Cheese, Grated

METHOD

Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta, cook for 8 to 10 minutes, until al dente, and drain. Heat oil in a large heavy skillet over medium heat. Sauté Onion, Green pepper and Bell peppers until Onions are soft and translucent. Stir in Tomatoes, Wine (or Vinegar), and Buffet Olives. Simmer for 15 minutes. Toss pasta with sauce until evenly coated. Pour into a baking dish. Sprinkle with crumbled Feta cheese and grated Cheddar cheese. Bake for 5 minutes in the preheated oven. Set oven to grill and grill for 5 minutes, or until topping is golden brown and bubbly.
