Tomato Salad with Buffet Green Pitted Olives, Feta & Fresh Herbs

INGREDIENTS

2 large ripe plum/roma tomatoes (cut into small wedges) 2 large ripe beef tomatoes (sliced) A large handful of mixed colour cherry tomatoes (cut in half) 1/4 of a small red onion finely chopped (soaked in a little cold water for 5min before use). This can be an optional ingredient A couple rounds best quality feta cheese (broken into large chunks) A handful of Buffet Pitted Green Olives A handful of roughly torn fresh flat leaf (Italian) parsley (according to taste) A handful of roughly torn fresh dill (according to taste) 3 tablespoons Good quality extra virgin olive oil 1 tablespoon Good quality red wine vinegar A pinch of ground sea salt (or to taste) A pinch of ground black pepper (or to taste)

METHOD

Place your tomatoes, onion & fresh herbs in a large glass bowl. Lightly drizzle over the olive oil and red wine vinegar and mix gently. Add a little salt and pepper according to taste and mix again. Taste and add more if needed. Add your olives and cheese on top of this. Serve immediately with some warm crusty bread and a glass of your favourite chilled dry white wine. Enjoy!
