Traditional Greek Salad with Calamata Style Olives

INGREDIENTS

Half an English cucumber (cut into bite-sized chunks) 4 x large ripe tomatoes (cut into bite-sized wedges) 1 green bell pepper (seeded, white pith removed and sliced) 1 x small red onion (thinly sliced and amount according to taste) A handful of Buffet Olives Calamata style olives A large piece of feta cheese (broken up into large chunks and not crumbled) Best quality extra virgin olive oil Best quality dried oregano A grind or two of black pepper A squeeze of fresh lemon juice (never use the bottled kind as this will ruin your salad) or a dash of good quality red wine vinegar (according to your preference) Your favourite crusty bread (warmed in the oven before serving)

METHOD

Place your onions in some ice cold water and allow to rest for 5min (this will make them milder). In a salad serving bowl, add the cucumber, tomatoes, pepper, sliced onion and olives. Gently mix the ingredients so that they are evenly distributed. Evenly distribute the feta cheese on top of the vegetables. Lightly sprinkle a pinch or two of dried oregano on top of the salad along with the black pepper (according to taste). Add a swirl or three of the best quality olive oil you have and a squeeze or two of fresh lemon juice or a dash of red wine vinegar (according to taste). Serve the salad straight away with some slices of warm, crusty bread and a little extra olive oil for dipping the bread into. Enjoy with a glass of good quality chilled dry white wine.
